A well tuned 19T will get you 300whp with many in the 310-315 range. A gt28 might do a bit more but I'm not as familiar with them. You can visit ATP's site as they have several bolt on turbos up to a GTX3071.

Exhaust manifolds come in various varities and will depend heavily on your future turbo upgrade plans. If you're not worried about factory manifold bolt on turbo options (like 19T, ATP turbos, Kunigawa, etc) then I would go with a DEI/SPA Cast Exhaust Manifold which is designed for use with T3 flange turbos. It's a cast manifold (non tubular) so it will not crack like many tubular designs do and also has an external wastegate flange. I'm more focus on bolt on turbo options at the moment (easier, less new parts) but if you're going all out then a DEI manifold is your best friend. T3 turbos are easy to come by and come in a variety of prices from down right cheap ($300) to very expensive ($1300+).

Don't assume AFR's until you have a gauge. We've had a few guys pop motors when they weren't watching AFR's even on canned tunes. Stock injector is generally fine for stage 1 but you definitely want to go bigger for anything else. If you get an AFR setup, go for the Innovate MTX-L, its $160 brand new which is about as cheap as I've seen.

I'm running a PRW Stage 3 PA tune at the moment, looking to use a CMD to lean out my mixture as my AFR's is running the 9's at WOT although even then I put down a dynojet equivalent of 275whp and 330wtq so with a leaner AFR at 11.5 I should be getting at least 300whp. Pipe fitment is good with no modification (no fog lights) but you'll want to check fitment with a CAI. My SRI fits without issue. 19T or gt28rs are both great options and its hard to be disappointed with either if you have a tune for it.

Hey, the intercooler has been great. I ran some logs and found that even with my 19T turbo upgrade, IAT's were at most 23F above ambient after multiple successive WOT highway pulls and temps dropped off at a good rate when I got off the throttle. These are very good results especially so when you consider the price. I'm using Depo Racing intercooler piping because it is a great fit while limiting guess work and ghetto piping.
