Hi, I was wondering if anyone has any knowledge or experience in converting the stock navigation radio back to the non navigation style so I can install an aftermarket radio. I can get the non nav radio, wiring harnesses and other dash components if needed. I looked around but did not find any posts or information about this.

I think it looks exactly what you want (even though it was done on 2016).
The guide is mostly focused on making climate control work (because it is main reason why people want to do that conversion after installing aftermarket unit), but contains all steps you are asking for.
I had to buy a bezel, blue non-nav screen, some wires and connectors from eBay to make that.
Also, if you get iDatalink Maestro device and compatible headunit, you will get clock and media information on that blue screen.

Also, if you plan to use iDatalink Maestro, take a look at Looking to swap the OEM HU from a 2015 coupe 3.8 w/ Navi..., it will show how you can connect audio using SPDIF interface (or you can use Axxess harness, then you get audio with HYKIA-SPDIF, but lose upper half of blue screen).
